It's the line that goes all the way through, as I'm sure you know. If our perspective of the pancake is along a line, it's along a diameter. That way, we cut right to the core of the issue.

I love your analogy on the whole. Though, tangent doesn't seem like the right term in this sense, nor does diameter...it's more that the person is occupying a different point on the pancake. I'm not sure where "the issue" is spatially located.
